This gorgeous salami is prepared with free range British pork shoulder and a careful combination of herbs and spices. Cracked black peppercorns provide its signature flavour and delivers a depth of taste which works beautifully with the tanginess of the cured meat.

Chilli and Paprika

We all like spice in our life but of course it has to be balanced. The level of chilli flakes in our ‘Spiced’ salami highlights its underlying character, whilst also delivering a sharp piquant. The sweet paprika and garlic combined with the beautifully textured pork shoulder produces a deep rich flavour similar to that of an Spanish Chorizo but pierced with hot notes from the chilli flakes. Very moreish indeed.

A little history if you will…

Charcuteries’ roots have been in Europe for many thousands of years before it was developed by the French into the highly specialised craft for which it is  now known and respected.

First devised in ancient times as a way to preserve meat throughout the winter months, salting and drying protected it from the environment and extended its life significantly. It’s thought that the Romans may have begun to specialise these techniques according to different cuts of meat and in turn begin to lay down the beginnings of the variety of products we see today.
